You should be able to point to every place your customers' information passes through. Here is the list, and for every client we write it down for their own setup.

Sensitive records
Patient files, student records and financial documents are never read by AI unless you ask for it in writing for a specific task.

Everything keeps running, because every account is already yours. We hand over the written description of how it works and remove our own access the same day.
